Keto Gnocchi

  • 1 large swede
  • 100-150 g coconut flour
  • 3 eggs
  • Salt
  • 1 tbsp psyllium husk
  • Ingredients for tomato sauce
  • 1/2 L tomato puree
  • 100 ml red wine
  • 2 cloves of garlic
  • 1/2 red onion
  • 200 g mushroom
  • 1 tsp oregano
  • 1 tsp basil
  • Salt and Pepper
  • Chilli (optional)
  • Olive oil


    Peel the swedes cut them to small pieces and cook it in boiling salt water.

    After cooking mash them with a potato masher and let it cool down.

    After that add the eggs, psyllium husk and coconut flour.

    Mix them together and if the pastry is too sticky add more coconut flour.

    This gnocchi will be cooked in the oven, not in boiling water.

    Put baking paper on a flat pan and put the gnocchi on it.

    Bake in preheated oven for 24 minutes.

    Preparation for the tomato sauce:
    In a large deep pot put olive oil and the cut onion with salt and start to cook.

    Add the crushed garlic and sliced mushrooms.

    After a couple of minutes pour in the tomato puree and spices.

    Cook slowly for ten minutes then add the gnocchi and stir together.

    If the sauce is too thick add some water or cream.

    Sprinkle with grated cheese when serving.
