Celeriac Cream Soup with Sausage.

  • 1 celeriac
  • 1 turnip
  • 2 parsleys
  • Olive oil and butter
  • Salt and Pepper
  • 1/2 tsp nutmeg
  • 1 red onion
  • 1 clove of garlic
  • 250 ml cream
  • 150 g grated cheese
  • 250 g sausage


    Preheat the oven to 200 degrees Celcius

    Cook the sausages.

    Take them out of the oven and slice them then cook them for another 6-8 minutes until they are crispy.

    Peel the vegetables and cut them to the same sizes.

    In a deep pan put olive oil and butter and start to heat up.

    Then add the onion and salt.

    After a couple of minutes add the garlic and vegetables.

    Pour water until it’s covered.

    Add the spices and cook slowly until the vegetables are soft.

    Then add the cream and use a blender / food processor until it’s creamy.

    If it’s too thick add more water.

    Add the cheese last and stir until it melts.

    When serving, add the sausage slices on the top.
